Couverture Chocolate - Dark, Milk & White Couverture is the professional's chocolate. The defining characteristic is cocoa butter content - at least 31% in the international standard - which is why couverture tempers beautifully, sets with a clean snap, and develops that mirror-like gloss that separates hand-crafted chocolates from ordinary confectionery. Sunbeen manufactures couverture for chocolatiers, patisseries, hotels, and food manufacturers who need a high-performance chocolate that behaves predictably across tempering and moulding processes. We do not cut corners on cocoa butter - the tempering behaviour and finished quality you get from our couverture reflect that directly.
